ABOUT ARTISNAL CHEESE

An artisanal cheese is unique to the farmstead on which it is made. Good pasture, pure water and happy animals are essential in the production of milk that will become a great cheese.

Trace minerals unique to the land and seasonal blooming in the farm's pastures enable unique and subtle changes in the milk and ultimately in the cheese.

In practical terms cheesemaking is a way to preserve milk. Artisanal cheesemaking is a way to cherish the seasonal beauty and bounty.

A LITTLE ABOUT SHEILA

Sheila Litchfield has 30+ years of experience raising Alpine goats and making cheese with goats milk and cream readily available in stores. 

Among the artisanal cheeses created at the Dell Farmstead you'll find parmesan, cheddar, aged provolone, feta, mozzarella, Chevre, ricotta & more.

Tomme de la Dell and Croittin de Dell are unique cheeses Sheila has created and aged in her cheese cave.

Whether your interest is feeding your family fresh, locally produced products, entertaining guests or exploring your culinary creativity, you'll be certain to enjoy these fun and informative workshops.
